1 ripe banana
1/2 teaspoon lemon juice
50g/2 oz butter
100g/4 oz icing sugar
Mash the banana with the lemon juice. Cream the butter, then gradually beat in the sugar alternately with the banana and continue beating until light and fluffy.
* I have to admit, I use two bananas!
