Basic Chicken Stock #1

A basic chicken stock used in several other recipes

Ingredients

One medium sized chicken carcass, stripped of most of the meat but not all

Three tablespoons balsamic vinegar
Three celery stalks, chopped
Two carrots, peeled and chopped
One small yellow onion, finely minced
One shallot, finely minced
One teaspoon Oregano
Two bay leaves
Two garlic cloves
Two tsp black peppercorns
Two tsp ground sage
Three tsps Holy Basil
Two thin slices of ginger root
A few dashes of cumin
One sprig of fresh rosemary
Three quarts of water

Method

Simply place all of the ingredients in a pot and allow it to cook for six hourss or until the bones are almost mush. Then pass through a sieve or whatever else you like to get rid of the chunks and enjoy!
