Asian Meatball Soup w/Broccoli

Serves: 4

Ingredients



MEATBALLS
8 oz ground beef
1/4 cup plain bread crumbs
1 egg white
1 tbs minced ginger
1/2 tbs soy sauce
2 tsp minced garlic

16 oz bag broccoli florets and baby carrots
2 pkgs (3 oz each) Oriental flavor ramen noodles soup with seasoning packets
6 oz sugar snap peas
2 tsp dark Oriental sesame oil



Method

MEATBALLS: Mix ingredients until blended. Place on wax paper, pat into 1 inch meatballs. Bring 5 cups of water to a boil. Add carrots to boiling water, cover and cook until tender. Add meatballs to pot, stir in contents of noodle seasoning packets and broccoli. Reduce heat, cover and simmer until veggies are tender. Break each block of noodles into 4 pieces. Add to soup and cook 1 min. Stir in peas and boil until noodles are tender and peas turn bright green. Stir in sesame oil. Remove from heat. GARNISH SERVINGS WITH CHOPPED SCALLIONS AND SERVE WITH BREAD OR CRACKERS.*
