A peanut butter and jelly version of thumbprint cookies

Ingredients

3/4 cup of flour
3/4 tspn of salt
1/2 tspn of baking soda
1/3 cup of creamy peanut butter (honey flavored is really good)
1 egg
1/3 cup of brown sugar
1/2 stick of butter
1/3 cup of sugar
1/2 tspn of vanilla
3 tbsp of jelly/jam

Method

pre-heat oven to 375 F. whisk dry ingredients together (flour, salt, and baking soda). in a separate bowl mix (preferably by hand, but you could use a hand mixer) peanut butter, well-softened butter, and brown sugar. slowly add in the egg and vanilla. mix the two mixtures together, combining well. roll dough into 1 inch balls, roll in sugar, and place on baking sheet. bake for about 7-10 minutes, then remove. press the back of a 1/4 tspn into each cookie to make an indent, then fill with a heaping tspn of jelly/jam. bake for about 10 minutes or until golden. enjoy.
