Brownies - low fat

Ingredients

1/2 cup (125 ml) VE Pure Cocoa
1 cup (250 ml) all-purpose flour
1 tsp (5 ml) VE Baking Powder
1/2 tsp (2.5 ml) salt
2 Tbsp (30 ml) unsalted butter
1 1/2 cups (375 ml) sugar
2 egg whites
1/2 cup (125 ml) applesauce
1 tsp (5 ml) VE Vanilla Extract

Icing:
1 cup Cool Whip (I use low fat)
¼ cup cream cheese (I use low fat)
2 Tbsp VE Summer Berry Fruit Dip Mix or VE Lemon Chiffon Fruit Dip Mix

Method

1. Preheat oven to 350° F (175° C). Lightly spray an 8" x 8" (20 x 20 cm) pan with vegetable oil.

2. Sift VE Pure Cocoa, flour, VE Baking Powder and VE Sea Salt into medium mixing bowl.

3. In large bowl, beat together butter and sugar. Whisk in egg whites, applesauce and VE Vanilla Extract.

4. Stir flour mixture into butter and applesauce mixture until just combined.

5. Pour into prepared pan. Bake for 35 - 40 minutes. Cool in pan - cover with icing if desired - and cut into squares.
