Banana Bread

Dairy and egg free banana bread recipe. Makes a nice dense bread with a sweet crunchy top.

2 cups flour (try 1 cup whole wheat + 1 cup regular!)
1.5 tsp baking powder
.5 tsp baking soda
.125 tsp nutmeg
.25 tsp salt
.5 cup soymilk (I usually use Costco vanilla soymilk, refrigerated soy milks are usually thinner/more watery)
4 very ripe bananas
1 cup sugar
.5 cup vegetable oil
.25 cup walnuts (optional)
1-2 tbsp cinnamon+sugar


mix all dry ingredients, mix all wet ingredients, mix together.

I usually put it in a bread pan, but it can also be a 8x8 pan.

sprinkle the top with cinnamon-sugar.

bake 55-60 mins or until golden brown and a toothpick comes out clean @ 350

you can substitute 2 eggs for the soymilk, but I find it comes out really moist with the soy.
