Selsig Morgannwg (Glamorgan Sausages)

A meat free alternative to sausages. This is a Welsh recipe that never fails to impress.

Ingredients

3oz grated cheese (best choose a strong cheddar)
5oz fresh breadcrumbs
1 small onion
1 egg
a pinch of mixed herbs
a pinch of mustard
1 oz flour
salt and pepper
2 oz fat
1 oz crisp breadcrumbs

Method

Finely chop the peel the onion

Separate the egg yolk from the white

Mix the onion, cheese, breadcrumbs and seasoning and bind together with the egg yolk

Make into sausage shapes and roll in plain flour

Beat the egg white until frothy

Dip the sausages in the egg white and roll in the crisp breadcrumbs

Fry in hot fat

Serve with mashed potatoes or chips
