Pumpkin Bread

A quickbread using my favorite fall ingredient.

Ingredients

3 1/4 cups flour (wheat flour works really well in this recipe)
2 tsp. baking soda
1 tsp. ground nutmeg
1 1/2 tsp. salt
2 tsp. cinnamon
2 Tbsp. pumpkin pie spice
3 cups white sugar (half brown sugar, half white sugar is also an excellent substitution)

2/3 cup water
4 eggs
2 cups pumpkin puree
1 cup vegetable oil

1/2 cup raisins

Method

Preheat the oven to 350 degrees.

Combine the dry ingredients in a large bowl.

Combine the water, eggs, puree and oil in a separate bowl.

Mix the wet with the dry, and add the raisins. Place in lightly greased baking pans and bake at 350 degrees for about 40 - 50 minutes.*

*This cooking time is for mini loaf pans. They're about 3 x 6 inches, and this recipe makes about 5 mini loaves. Adjust the cooking times accordingly.
