Spinich Salad with Waffle Croutons

Spinich salad with waffle croutons.

Ingredients

2 waffles [4"] cut into 1" pieces
1/2 cup italian vinaigrette
2 tbs grated parmesan
1 tbs dijon mustard
4 cups spinich
3/4 cups sliced mushrooms
1/4 cup onion - sliced
1 cup cherry tomatoes [halved]
3 slices cooked bacon - chopped [if desired]

Method

Cut 2 waffles into 1" pieces. Whisk 1/2 vinaigrette, 2 tbs grated parm & 1 tbs dijon mustard; toss 1/4 cup with waffles. Bake in a 400 F oven until golden brown. To left over dressing, add 4 cups spinich, chopped bacon [if desired], 1 cup cherry tomatoes, 3/4 cup mushrooms -sliced & 1/4 cup sliced onion and croutons.
