1 cup milk
1 cup raisins or sultanas
1 finely chopped apple
1/3 cup vegetable oil OR 1/3 applesauce + 1tbp oil
1 cup flour + 3 teaspoons baking powder
1 cup self-raising flour + 1 teaspoons baking powder
(sometimes I use 1/3 wholemeal + 2/3 white flour)
1 cup oats
1/3 cup soft brown sugar
1 teaspoon nutmeg
2 teaspoons cinnamon
Mix dry ingredients in one bowl, and wet ingredients in another.
Add raisins and apple to dry ingredients and mix to coat with flour.
Stir until just combined, batter will be lumpy.
Spoon into muffin cups (fill 3/4 full) and bake at 400°F/200°C/Gas Mark 6 for 25 mins.
Store in tin for up to 4 days or freeze and defrost in the microwave when desired (they taste lush warm!!!!)
