
A thin crust Goat Cheese Pizza with mushrooms and Spinich

Ingredients
1 10" Ready made thin Pizza Crust
1/2 cup softened goat cheese
1/3 pound Shitake Mushrooms, Sliced thin
1/3 pound Baby Bella Mushrooms, Sliced thin
2 cloves of garlic, chopped
2 tsp. Olive Oil
2 tbls. Shreaded Parmesan Cheese
2 cups spinich, loosely packed
Method
Pre-heat oven to 425 degrees.
Heat large pan to medium/ high heat. Add olive oil and cook the mushrooms until softened. Add Garlic and stir for 1-2 min. Then add spinich and stir in until all the spinich wilts down, only a minute or so.
Spread goat cheese on ready made pizza crust and top with mushroom and spinich mixture. Sprinkle parmesan on top. Bake until golden brown, about 12 min.
