Cottage Cheese Pancakes

Not as terrible as you think! I perfer the savory kind, topped with some lowfat yogurt for breakfast, but you could nix the spices and onion for cinnimon, allspice, and some splenda if you have a sweet tooth!

Ingredients

Half a medium red onion, chopped
1 tablespoon butter
1 egg
1/2 cup cottage cheese
2 tablespoons flour
1 clove of garlic
Onion powder
salt
pepper

Method

Saute the onion in the butter until golden, and
allow to cool in pan. In a small bowl, beat egg slightly,
blend in cottage cheese, flour, spices, and onion
butter mixture. Heat nonstick skillet, spray with Pam,
and place four 1/4 cup scoops of batter and spread into
small pancakes. Cook until browned... flip and cook until
lightly brown on other side.
