Mushroom and Wild Rice Soup

Ingredients

1 cup wild rice washed and rinsed
1 cup rough chop onions
1 cup rough chop celery
1 small zucchini shredded
1 cup diced, peeled potatoes
1 cup shredded carrots
4 cups sliced fresh mushrooms
1 tsp minced fresh garlic
salt, pepper to taste
1 cup white wine
1 cup milk or 1/2 and 1/2 cream
4 cups chicken or vegetable stock
olive oil for sauteing

Method

Saute all veggies and garlic in olive oil until onion is tender and glassy. Add wild rice and 1 cup of the stock and simmer for approx 45 min. until soft crunchy. Increase heat and add white wine. Add boiling hot stock and continue to boil for approx 10 minutes. Remove from heat and add milk or cream. Bring to boil again and heat through for 2-4 minutes. Season with salt and pepper to taste. Serve.... Great the next day!
