Mexican Casserole

Yummy, easy to make dish I can't take the credit for, but love!

I usually double the recipe...and if you're big eaters, you'll use this to feed 3-4 instead of the prescribed 6.

Serves: 6

Cooking time:

Ingredients

1/2 lb ground beef or turkey
1 cup dry rice (2 cups cooked)
1 can pinto beans, drained (or kidney)
1 can corn, drained
1/2 pkg reduced-sodium taco seasoning
1/2 cup light cheddar cheese, grated

Method

Brown beef or turkey, drain fat.
Cook rice according to package directions.
Mix beef, rice, beans, corn, and taco seasoning into bowl, mix thoroughly.
Sprinkle cheese over top, and mix in.
Cook in oven safe dish for 20 minutes.
