Lemon Bars

Ingredients

Crust:
1/4 C Vegetable Oil
1/4 C Sugar
1/4 tsp. salt (optional)
1 C flour
1 1/2 tsp milk

Filling:
1 egg
1 egg white
1/3 C lemon juice
2 Tbsp flour
1/2 tsp baking powder
1 C sugar

Drizzle (you can sprinkle with powdered sugar while warm, instead):
3/4 C powdered sugar
1/2 tsp vanilla
3 tsp water
1/8 tsp lemon juice

Method

1. preheat oven to 350 degrees
2. mix crust ingredients together until crumbly and press into bottom of ungreased 8x8 or 9x9 pan
3. bake crust 15 minutes (add a few minutes for a light pan)
4. while crust is baking, mix together filling ingredients
5. pour filling ingredients over still hot crust and return to oven for 25 minutes or until slightly brown on top or around edges
6. after removing from oven, loosen from edge of pan with a knife and allow to cool completely
7. mix together drizzle ingredients and drizzle over cooled lemon bars.
8. slice and enjoy!
