Taco Chicken Salad

A way to serve taco-style main dish without having to keep it warm, making it great for potlucks!

Ingredients

1 whole cooked chicken from deli
4 celery stalks, chopped
1 1/4 cups mayo
1/4 cup chopped cilantro leaves
2 pkgs of taco seasoning mix
2 plum tomatoes, sliced
12 Flour Tortillas or Flavored Wraps

Method

Remove meat from chicken bones. Cut into bite-sized cubes. Place in large mixing bowl. Add the mayo, chopped celery, chopped cilantro, and the taco seasoning. Mix well. Spoon into a deep-dish pie pan and even out. Cut the tomatoes into half-moon slices and arrange along the side of the pan. Sprinkle some chopped cilantro over top, if desired. Cover and chill for 1 hour before serving. To serve: spoon onto tortilla or wrap and roll up like a soft taco.
