Korean-style sushi

Palmfuls of fresh healthy tasty goodness. washed down with chinese green tea (eg bi luo chun) and followed by fresh cut pineapple for dessert.

Ingredients

buy cooked chicken or cook chicken (roast or fry in non-stick pan) in honey, soy sauce and garlic.
meat alternatives are tuna or salmond
NB meat not necessary
large red capsicum
large green capsicum
2 medium sized carrots
red onion
one large ripe avacado
2 cups cooked jasmine rice (optionally add dash of rice wine vinegar)
seasoned laver seaweed (not supermarket 'weed but korean owned asian food market)
pickled ginger
wasabi
soy sauce

Method

Cut vegetables and chicken into small - medium sized pieces
Cut/tear seaweed into 5-7cm squares
Place seaweed in palm and add small portion of rice, piece of chicken, capsicum, carrot, onion, avacado, ginger, and small bit of wasabi.
Dribble some soy sauce on top and pull corners into the centre to form a palm sized package.
Put in mouth in one go and cover mouth with hand like giggly little Japanese schoolgirl.
Repeat and enjoy until no more room in stomach and u have to lie down and hold abdomen.
