shrimp and grits

Ingredients

2 1/2 cups canned chicken broth, low sodium
4 tbsp butter
3/4 cup quick cooking grits
3 tbsp cream cheese, i use 1/2 the block
2 tbsp half and half, more if you want to make soupier
1/2 cup green onion (optional)
1lb uncooked medium peeled, deviened
2 tbsp fresh lime juice (optional)

Method

combine chicken broth and 1 tablespoon butter in heavy medium saucepan and bring to boil. Stir in grits. Reduce heat; cover and simmer 5 min, stirring occasionally. Mix in cream cheese and half and half into grits. Cover and simmer mixture until almost all liquid has evaporated and grits are tender, stirring frequently, about 7 min. Stir in green onion. Remove mixture from heat. Melt remaining 3 tbsp butter in large skillet over medium-high heat. Add shrimp and saute just until shrimp are cooked through, about 3 min. Stir in lime juice. Remove skillet from heat. Spoon grits onto center of plate, top with shrimp and drizzle with lim butter from skillet
