Pre-heat waffle iron and lightly grease with olive oil.
3 cups of Krusteaz Belgium waffle mix
1/3 extra virgin olive oil
1 1/2 cups of water
2 scoops of soy protein (1/2 cup)
2 scoops sprouted flax seed (1/4 cup)
Mix it all together with a wire whip until smooth. If the mix is a little thick add a little extra water.
Pour about 2/3 cup batter onto the preheated and lightly greased waffle iron. Cook 3-4 minutes until golden brown, or according to waffle iron instructions.
These waffles can be frozen and quickly warmed in your toaster and are ideal healthy snacks for kids on the go.
