Steak Tartare

the best steak in the world ( and its not even hot!!! )

Ingredients

300 grams end of beef fillet, straight from the fridge ( ideally aberdeen angus beef )
1 tblsp capers, rinsed, drained & chopped.
2 shallots, finely chopped.
2 tblsp fresh flat leaf parsley, chopped.
1 large gherkin, finely chopped.
1 tblsp extra virgin olive oil.
3 dashes tabasco sauce.
1/2 tsp sea salt flakes ( ideally maldon sea salt )
20 turns of black pepper.
2 medium egg yolks.

Method

Trim the beef of all fat and sinew and finely chop by hand. Place the meat into a bowl with the capers, shallots, parsley, oil, gherkin, tabasco, salt & pepper.
Mix together lightly with two forks, then spoon into the centre of two chilled plates and shape into a neatish round. Make a small indentation in the to and add an egg yolk.
Serve ideally with french fries!!!

PLEASE NOTE THIS RECIPE USES RAW EGG!!!!!!
