6 boneless, skinless chicken breasts
6 tsp. taco seasoning
3 cups (approx.) sliced, peeled potatoes
1 1/2 cups shredded cheese
3/4 cup salsa or picante sauce
Preheat oven to 400. Sprinkle chicken evenly with seasoning mix - approx. 1 tsp. each. Place 1/2 cup of the potatoes on center of each of 6 large sheets of foil; top with chicken breast, 1/4 cup of cheese and 2 Tbsp. of the salsa or picante sauce.
Bring up foil sides, double-fold top and both ends to seal each packet. Place in a single layer on a cookie sheet.
Bake 25 minutes or until chicken is cooked through and potatoes are tender. Remove from oven and let stand 5 minutes. These can be served in the foil (when camping & for easy clean-up) or taken out & placed on a plate. Top with salt, pepper, & sour cream to taste.
