90-Minute Dinner Rolls

A rapid rise dinner rolls from Fleischmann's Yeast www.Breadworld.com.

Ingredients

2 to 2-1/4 cup all-purpose flour

2 tablespoons sugar

1 envelope Fleischmann’s RapidRise Yeast

1/2 teaspoon salt

1/2 cup milk

1/4 cup water

2 tablespoons butter OR margarine


Method

Combine 3/4 cup flour, sugar, undissolved yeast and salt in a large bowl.
Heat milk, water and butter until very warm (120º to 130ºF).
Add to flour mixture.
Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally.
Add 1/4 cup flour; beat 2 minutes at high speed.
Stir in enough remaining flour to make soft dough.
Knead on lightly floured surface until smooth and elastic, about 8 to 10 minutes. Cover; let rest 10 minutes.


Divide dough into 12 equal pieces; shape into balls. Place in greased 8-inch round pan. Cover; let rise in warm, draft-free place until doubled in size, about 30 minutes.


Bake at 375ºF for 20 minutes or until done. Remove from pan; brush with additional melted butter, if desired. Serve warm.

Great - I am making it for the first time right now...and I have always avoided yeast recipes, especially breads. Wish me luck!

Good Luck! It has never failed for me and I made it alot. I've even used it for pizza dough, garlic bread, loaves. Fear not if you follow the direction you shouldn't have a problem. Only thing I would note is depending on weather and room temperature it may need a bit more time rising. When it's raining here the rise took about 40 minutes. I live in Nova Scotia.

Ha...just what I am experiencing so good to know! I live in Beijing so it's very dry here but my kitchen is not "toasty" warm like what I perceive it should be for dough to rise. I am continuing the 10-minute rise to 20-minutes and I kind of cracked my oven door open to make the space a little warmer. Thanks for the heads up...I was beginning to think, "oh, not again...another failure!"

Well, it flopped! It just never rose very high...I think that my yeast was old. I keep it in the freezer but it has been in there for a couple of years now. I am going to buy new yeast and try it again.
