Porcupines

Ingredients

1 170g can Red Salmon
1 cup Uncooked Minute Rice
1/2 cup Grated raw Carrot
1 med. Onion(chopped finely)
1 Egg
1/2 tsp Salt
Pepper to taste
1 can Condensed Mushroom Soup (10oz)
1 1/2 cup Water

Method

Mix together salmon (with liquid), rice, carrots, onion and egg. Season with salt and pepper.
Shape into 6 large balls, place in a buttered deep sided 2 quart baking dish, leaving space between balls for expansion of rice during cooking. Mix soup and water, pour over all and cover dish.

Bake in moderate oven at 350 degrees for 1 hour.

Substitutions: May use a can of flaked ham of flaked chicken instead of salmon.

Variation: Instead of can meat and mushroom soup you may.......use 1 lb of cooked hamburg and 1 can tomato soup ( I like 2 cups tomato juice instead of the water and condensed soup in this variation)
