Patate brasate al forno ( braised baked potatoes)

I got this recipe from Chris and loved it! Here is what he wrote: This was originally an Italian peasant dish. It doesn't need a lot of preparation so it's great if you don't have time to cook.

Ingredients

750 g waxy potaotes, peeled and cut into 5 mm slices
250 g tomatoes, coarsely chopped
1 large onion, coarsely chopped
chopped fresh herbs ( parsley, basil, chives, sage) , about 1/2 tablespoon each, but follow your taste
3 T extra virgin olive oil
freshly ground black pepper
sea salt to taste

Method

Preheat oven to 240°C.
Put all the ingredients into a roasting pan and mix well with your hands. Bake for about 1 hour or until the potatoes are cooked.
Enjoy. Even better, get a glass of red wine with it!
