Work with spoon until creamy. With hands shape into rolls. Wrap in aluminum foil and refrigerate until cool, about 30 minutes. Slice ¼ inch off or roll out and cut, then bake on an ungreased cookie sheet for 10 minutes at 360 degrees.
Variation: Christmas Pinwheels:
Make two batches of shortbread dough. Separate one batch in half. Add a few drops of red food dye to one half and green food dye to the other. Mix well, shape into a ball. Refrigerate. When cool roll out half of the plain and the red dough into approximately the same shape. Place the red on top of the plain and roll up into a log. Refrigerate again if necessary, it is easier to cut when cool. Cut the roll into 1/4 inch slices, bake for 10 minutes in the 350 degree oven.
