Mother's Everyday Pimento Cheese

Ingredients

1/2 lb extra-sharp white cheddar
1/2 lb extra-sharp orange cheddar
1 7-oz jar pimento, drained, finely chopped
1/2 tsp black pepper
cayenne to taste
2/3 cup mayonnaise

Method

Grate cheeses finely. In large bowl, mix cheese with pimento and seasonings, then stir in mayonnaise, mashing a bit with fork. Should be relatively smooth and flecked with small pieces of pimento.
Cover and chill at least two hours to allow flavors to develop.
Use as sandwich spread or serve with crackers.
