Salsa di pomodoro e porcini con balsamico

A side dish of cherry tomatoes and mushrooms with a balsamic sauce.

Ingredients

Cherry tomatoes
Porcini (or other) mushrooms
Balsamic vinegar

Method

Saute the mushrooms in olive oil and butter, sweating them to create a jus rather than frying them. Season with thyme, salt and pepper. Add halved cherry tomatoes. Once they have softened, add a good amount of balsamic vinegar. Continue cooking while stirring.
