Pizza Sauce and topping ideas

An easy red sauce and topping to go with!

Serves: 1-2 pizzas

Ingredients

15 oz tomato sauce or diced tomatoes
2-3 cloves garlic, crushed
olive oil
1-2 TBS oregano
2 tsp rosemary
Balsamic vinegar, optional
any other Italian herbs (fresh basil is yums)
2-3 TBS Tomato paste

Method

Heat about 1 TBS olive oil in saucepan. Add garlic and let it just start to brown over med/high heat. Add dried herbs and stir for about 1 minute. Add tomatoes and mix. Add PASTE and mix. Let simmer over low heat for about 4 minutes. Add a dash of vinegar if you like, or red wine, and a little more olive oil for taste. Cook 2 or 3 minutes more until it looks like a good thickness for pizza sauce.

Other options: Before adding tomatoes sauce, add 8-12 oz. of sliced fresh mushrooms and saute until browned. The proceed with directions.

NOTE: Because canned tomatoes usually already have a significant amount of salt, the sauce generally doesn't need it. But feel free to add if it needs it!

TOPPING SUGGESTIONS:

1. red sauce, canned jalepenos and pineapple chunks, any grated cheese! Weird sounding, but actually really good!

2; red sauce, zuchinnni, chopped spinach, thinly sliced onions,..ANY veggies are good!

3. pesto, feta or goat cheese, sliced red onion, kalamata olives, artichoke hearts

4. pesto, carmelized (or not) white or yellow onions, sauteed garlic mushrooms, gorgonzola cheese

5. red sauce or pesto, fresh sliced tomatoes, fresh basil and fresh mozzerella

If you don't want to try the easy pizza dough recipe that I posted, I had a great tip from my catering friends ;) They brush whole wheat pita bread with olive oil on both sides, then top with whatever. Toast it in the oven , like on 500 for about 7 or 8 minutes I tried it and it's yummy!

ps--if you're vegan, I tried saurkraut on my pizzas tonight instead of cheese and I thought it was good!
