Potato Cheddar Soup

A really delicious, simple soup.

Serves: 6

Preparation time:

Ingredients

1 tsp cracked black pepper
2 TBSP butter
1 large onion (chopped)
4 or 5 regular potatoes (peeled/cubed)
1/4# sharp cheddar (grated)
2 quarts chicken broth
2 bay leaves

Method

In a 6 qt. pot, saute' onion with pepper in butter. Add potatoes, broth and bay leaves. Bring to boil. Simmer 1 hour on medium-low. Remove from heat, stir in cheese, remove bay leaves. Beat all with wire whisk. Add a bit of salt if desired.
