Couscous Salad with Shrimp

Ingredients

1 6-oz box of couscous
10 medium shrimp, cooked, tails removed
1/2 cup chopped cucumber
1/2 cup grape tomatoes
2 tbsp parsley or cilantro
3 tbsp extra virgin olive oil
1 tbsp lemon juice

Method

1) Cook Couscous according to package. Then let cool.
2) In a large bowl, combine the couscous with shrimp, cucumbers, tomatoes, and herbs.
3) Drizzle with olive oil and lemon juice.
3) Toss to combine
4) Chill until you serve.
