Strawberry Cake

I haven't figured out how to make this vegan yet (you can find veggie Jell-O at health food stores).
Layer this with the Hershey's Chocolate cake recipe (found on the cocoa box) and you're in sheer heaven!!

Ingredients

2 ¾ cups cake flour
2 ½ tsp. baking powder
2 cups sugar
1 (3oz.) pkg strawberry jell-o
1 cup butter, softened
4 eggs
1 cup plain or vanilla soy milk
1 tsp. vanilla extract
1 ½ tsp. strawberry extract
½ cup strawberries, puréed & seeds strained

Method

Grease & flour 2 10-inch round cake pans. Mix flour & baking powder together & set aside. In a large bowl, beat sugar, jell-o & butter until fluffy. Add eggs one at a time, beating well with each addition.
Beat in flour & milk alternately. Fold in strawberry & vanilla flavoring and puréed strawberries.
Divide equally into two 10-inch round cake pans.
Bake at 350 degrees (175 C) for 25-30 minutes (test with toothpick or knife).
Cool for 5-10 minutes in pans, then remove and cool.
Ice with Vegan Buttercream Icing!
