1 box lemon cake mix
1/2 cup butter, melted
8 ounces cream cheese
4 cups powdered sugar
2 teaspoons lemon extract
2 drops yellow food color (optional)
Cake mix can be substituted by 2.5 cups flour, 1.5 cups sugar, 2.5 teaspoons baking powder, 1 teaspoon salt, and zest/juice of one lemon.
Preheat oven to 350 degrees.
Mix together cake mix, butter, and one of the eggs.
Press this crumbly mixture into a 9x13 pan.
Mix cheese, powdered sugar, lemon extract, and food color. Reserve 2/3 cup of this to use as frosting.
Add the eggs to the remaining mixture. Beat well, 3 minutes. Spread this over the first layer in the 9x13 pan.
Bake at 350 for 35-40 minutes.
Frost after cooling.
