red spicy Ethiopian beef stew

Ingredients

2-3 lbs beef cubed
5 large onions chopped fine or grated
1 c vegetable oil
5 teaspoons minced garlic
2 teaspoons minced ginger
1/4 c berbere paste
2 teaspoons salt (to taste)
1/2 c. water
1 Tablespoon lemon juice

Method

In a large pot, saute onion, garlic, and ginger in vegetable oil until lightly brown
Add Bebere and continue to simmer for about 15 minutes at low heat and stirring occasionally
Add beef and water, let simmer until beef is done.
Add salt and lemon juice and serve hot with injera

I made this in a slow cooker. I sauteed the onion, garlic, and ginger in a frying pan, added the berbere, simmered for 15 minutes and moved the onion mixture to the slow cooker, added the beef and water and set to cook on low for 6-8 hours. The meet was beautifully tender at about 6.5 hours.
