Cousin Machelle's Eggplant Casserole

Ingredients

2 large eggplants
1 can cream mushroom soup
2 boiled eggs
1 c. shredded Cheddar cheese
1 roll Ritz crackers
1/2 c. chopped onions

Method

Peel eggplants and cut into small pieces. Boil eggplant till tender (boil eggplant and eggs together). Combine all ingredients and mix well. Put into casserole dish. Bake 350 degrees for 40 minutes.
