1 pound boiling potatoes, peeled and cut into 1-inch
cubes - Enough to make 2 cups
2 tablespoons butter
1-1/4 teaspoon salt
1/4 cup milk
2 eggs, beaten
1 pound ground round
1 pound ground pork
1 finely diced onion
2 to 3 finely chopped garlic cloves
1/2 teaspoon pepper
1 teaspoon onion powder
1 teaspoon Italian seasoning, or more to taste
1/4 cup grated Parmesan cheese
1 teaspoon paprika
In a large pot, cook, drain and rinse potatoes. Mix with butter, salt, milk, and eggs.
Mix ground beef, pork, onion, garlic, pepper, onion powder and Italian seasoning in bowl.
Combine with 3/4 of mashed potatoes and pack into a 9x5x2-1/2-inch loaf pan.
Bake at 350 degrees F. for 40 minutes. Spoon the remaining mashed potatoes on top, sprinkle with Parmesan cheese and paprika and bake for five more minutes.
