2 Cans Eaglebrand sweetened condensed milk.
1/2 cup fresh lemon juice
Zest of two lemons
1/2 cup butter, melted
1 cup light brown sugar
1 cup unsifted flour
1 cup quick cooking oats
1 tsp baking powder
1/2 tsp salt
Preheat oven to 350, lightly grease a 9X13 square pan...Bake 35 minutes or until lightly browned. Cool on wire rack for 2 hours. These are best made the night before and left overnight as the lemon flavour is more intense the 2nd day.
In a small bowl blend Eagle Brand, juice and zest. You can mix and match the juices and zest, lime, orange, lemon, etc.
In a bowl, add melted butter to all other dry ingredients. Mix with hands until crumbly.
Spread oat mixture into greased baking pan. PRESS DOWN FIRMLY! Spread citrus mixture evenly over the crust.
Topping are optional. I like a dusting of graham crumbs. Graham crumbs mixed with melted butter as more of a crumbly topping is nice too. Sometimes I will just add a layer of orange (lime is fine too) zest as a toppers. Endless variations.
