Cowboy Beef

Easy main course in the crockpot with a little kick!

Ingredients

2.5-3 lbs boneless beef chuck pot roast
1 can diced tomatoes with chilis (do not drain)
1 can red beans in chili sauce (do not drain)
1 can corn with bell peppers, drained
1-2 tsp. finely chopped chipotle peppers in adobo sauce

Method

Place beef in slow cooker. In a bowl, mix the other 4 ingredients. Pour mixture over beef. Cook for 4-5 hours on high or 10-12 hours on low.
