2 cups dried lentils
1 large onion, chopped
1 carrot, chopped
1 bell pepper, chopped
4 cups water
4 cup tomato sauce
1 Tbsp parsley flakes
1 bay leaf (optional)
1/2 tsp garlic powder
** Note: Additional chopped vegetables may be added or substituted as desired.
1 Tbsp soy sauce
Place lentil chopped vegetables in a large pot with 4 cups of water.
Cover and simmer for 30 minutes.
Add tomato sauce, seasonings and soy sauce and simmer an additional 30 minutes.
Serve over your favorite bread, rice, or whole grains.
