2 - 16oz pkgs frozen yellow and white sweet corn (thawed)
1/4 cup sugar
1 1/4 t salt
2 cups Half and Half
4 large eggs
1/2 stick (1/4 cup) butter
3 T flour
1 red (sweet) pepper- minced
1 bunch scallions sliced thinly (include green tops)
Optional...seeds from 1/2 vanilla bean (or ¼ teaspoon pure vanilla) & parmesan cheese for topping.
Melt butter and lightly saute (or sweat with lid on) on med heat, peppers and onions...cool.
Process one bag of thawed corn in food processor to a medium meal. In a large bowl, place the processed corn, the bag of whole thawed corn, sugar, salt and the sauteed (cooled) vegetables. Mix well. Mix (in a separate bowl) the eggs, half and half, vanilla seeds and flour....add to corn mixture and pour into a buttered 9 X 13 cake pan and top with parmesan. Bake for 45 minutes in the center of oven at 350 degrees. Doesn't serve as many as you might think… and is also good room temperature or cold.
