Sweet Potato Hash Browns

Southern style hash browns (diced small) with purple onion.

I invented this last weekend -- not bad!

Ingredients

1 Bag of frozen Sweet Potato Fries
1/2 purple onion
2 tsp salt (or to taste)
1/2 tsp red pepper flakes (or use diced red pepper)
3-4 tbsp oil

Method

Dice each fry into small pieces about the length of your fingernail. Cut onion into similar sized pieces. Cook in oil over medium heat. Leave alone as much as possible, but turn over periodically for the next 20-25 minutes -- being careful not to squish the potatoes. The longer this cooks over low heat, the better it will be.
