1/4 cup good olive oil
2 garlic cloves, crushed
crushed red pepper flakes
2 large cans crushed tomatoes
1/4-1/2 cup quality vodka
salt to taste
1 large or 2 smallish zucchini cut into small pieces
1 medium onion, diced
1 pkg. Turkey Sausage ( I use Gianelli)
2 pkgs. frozen chopped spinach, defrosted and squeezed
3 Tbsp. butter
1/4 cup flour
2 cups milk
1 cup gruyere cheese, shredded
salt and pepper to taste
2 cups mozzarella cheese, shredded
1 pkg. no boil lasagna noodles
In a large saute pan with high sides, gently heat olive oil and garlic until lightly browned. Add chili pepper flakes according to desired heat level; saute 30 seconds. Add both cans of crushed tomatoes - careful, it will splatter! Add vodka and a small amount of salt Stir to combine and reduce heat to low; simmer while working on other ingredients. I put a splatter guard over the pan.
In a non-stick saute pan, squeeze the sausage out of the casings and brown, stirring to crumble. Remove from pan when done and immediately cook onion and zucchini.
While that is working, melt the butter in a sauce pan over med-low heat. Add flour and whisk constantly over medium heat for 1-2 minutes. This is called a roux (roo). You need to cook the flour taste out of it. Add the milk all at once and turn heat up. Continue whisking until thickened. Add cheese and pepper; whisk to combine. Stir in spinach and season to taste.
Spray a large (15'x12' or close to that) glass dish with cooking spray. Cover the bottom with a thin layer of red sauce. Place 4 noodles in the bottom, breaking to cover any large gaps. Spread the sausage next, then dollop half the spinach sauce; sprinkle with mozzarella. Spread a good layer of red sauce, 4 more noodles, again breaking to cover, next the zucchini and dollop the spinach sauce and sprinkle with some mozzarella; next a layer of red sauce, 4-5 noodles to cover the top and spread the remaining red sauce on top. Sprinkle remaining mozzarella cheese. Cover with foil and bake at 375 for 1 hour. Remove from oven and let sit for 10min to set up.
