Jip Way Chow Mein

Jip Way Chow Mien. I've tried to copy the Jip Way (house special) Chow Mein from Lin Heung Restaurant in Victoria, BC.

Difficulty: Easy - for beginners

Ingredients

SAUCE
1/2 cup olive oil
1 thumb of grated ginger
2 Tbsp soy sauce
1 cup chicken stock
1 Tbsp sesame oil
1 cup squid florets (~16)
8 dried shitakes
2 lb Bok Choy (6)
1 cup broccoli
4 Tbsp oyster sauce

1 Tbsp cornstarch dissolved in 2 oz water

1 Tbsp oil
1 lb fresh chow mein
2 green onions, cut in 1" strips

Method

Boil noodles for 5 minutes, drain. toss in 1 Tbsp oil and arrange on baking sheet in a birds nest. bake at 400 for 7-8mins, turn, bake 7-8mins until outer edges are crispy and browned.

While noodles are baking, in a wok or deep skillet add the sauce ingredients one at a time, cooking over high heat. Finish by adding cornstarch mixture to thicken and remove from heat.

Serve noodles, topped with sauce and green onions
Suggestion: also top with sliced char siu pork
