Boiled Fruit Cake

easy peasy to make, but allow the hour oven time, so not that quick to serve up.

Ingredients

1 cup sugar
1 cup water
1/2 cup nuttelex or butter
1/2 lb (225g) raisins or mixed fruit
1 teaspoon bi-carb soda
1 teaspoon gound cloves
1 teaspoon other mixed spices (optional)
Approx. 1 & 1/2 cups of flour

Method

Put all ingredients (EXCEPT flour) into saucepan, bring to boil.
Allow to cool.
Stir in enough flour to make suitable cake batter (thin batter). I used up some old wholemeal SR and added 1/2 cup LSA mix to mine and it worked out fine (like a rich pudding)
Pour into greased cake tin.
Bake for 1 hour at 180 degrees C.

Serve hot with custard and ice-cream!
