Coffee Cake Muffins

Ingredients

1/2 c. butter {1 stick}, softened
1/2 c. sugar
2 eggs
1/2 c. yogurt or sour cream
1 t. vanilla
Grated zest of one lemon
1 & 1/4 c. all purpose flour
1 & 1/2 t. baking powder
1/2 t. baking soda
1/4 t. salt

Filling & Topping
1/4 c. brown sugar
1 t. cinnamon
1/2 c. chopped walnuts or pecans

Method

Preheat oven to 350 F. Grease & lightly flour or grease & line muffin or cake pans.

Make the Filling by stirring the brown sugar, cinnamon & nuts in a small bowl until combined.

For the cake: Combine the butter, sugar, eggs, yogurt or sour cream, lemon zest & vanilla in a large mixing bowl and beat until well blended & smooth. In another mixing bowl combine the flour, baking powder, & salt and stir together until blended. Add the dry ingredients to the lemon mixture and beat until the batter is just combined.

Spoon batter into the prepared muffin tin until the cups are 1/2 full. Sprinkle 1/2 the filling mixture over the batter, then add the second half of the cake batter to cover. Finish by sprinkling the remaining filling mixture on top. Bake 25 to 30 minutes until a toothpick comes out clean.
