Hainanese Chicken Rice

Simple and easy dish for those who wants a clear flavour

Ingredients

Whole Chicken / 3-4 sets of Chicken Legs

INGREDIENTS FOR THE SOUP
3.5 ltr water
1 bottle shaoxing (chinese wine)
lots of ginger (I prefer lots of ginger)
3 cloves garlic
2 stalks spring onion

INGREDIENTS FOR GINGER DIP SAUCE
Ginger
Spring Onion
Soya Sauce / Peanut Oil (As you prefer)

INGREDIENTS FOR THE CHILLI SAUCE
1 inch Ginger
2 cloves Garlic
Lime Juice
6 Small Red Chilli
2 tsp Chicken Broth

Method

1. Put all these soup ingredients together, and bring to a boil
2. Add chicken into the stock
3. Bring the stock to a boil again, then reduce to a simmer for 15mins
4. Turn heat off, and allow chicken to soak / steep for another 20mins
5. In the mean time prepare the chilli and dipping sauce
6. Fish the chicken out of stock and cut into bite size pieces and chill
7. Use the chicken broth to replace the water usually used to make rice

Serve chicken dry with sliced cucumbers, dipping sauce, a bowl of broth and rice
