Italian Rainbow Rotini Salad

Ingredients

1 Box of multi-color Rotini
1/2 cup chopped onion
1/2 cup green (red or orange) pepper chopped.
Salt & Pepper
1 tbs italian seasoning
1/4 cup reduced italian dressing (may use lite, reduced fat, or regular)
1/4 cup Miracle Whip (may use lite or regular)

Method

Cook pasta until al dente according to box instructions.

Drain. Place pasta into large mixing bowl.

Add italian dressing, chopped onion, green pepper, italian seasoning, and a dash of salt and pepper to taste. Stir until distributed evenly.

Cover and place in refrigerator. Allow to marinate until cold.

Add Miracle Whip. Stir lightly to distribute evenly.

Serve.

Left overs can be stored in refrig. To rejuvenate, add a tablespoon or two of Miracle Whip before serving.

Variations:
Instead of Rotini, use multi-color Cheese Tortellini.

Use Lite or fat free dressings for a low-cal/low-fat option.

Use a mix a red, green and orange colored peppers.

Add chopped hard boiled egg.

Add chopped pepperoni or salami.
