Fresh Apple Cake

A moist cake with chunks of fresh diced apple and cinnamon, chopped nuts are optional. Good snack cake without frosting.

Ingredients

Fresh Apple Cake
4 cups peeled, sliced apples
2 cups sugar
2 cups flour
1 1/2 t. baking soda
2 t. cinnamon
1 t. salt
2 eggs
3/4 c. oil
2 t. vanilla
1 cup chopped nuts, optional

Method

Preheat oven to 350. In large bowl stir together apples and sugar. Add dry ingredients, stir well. In separate bowl beat eggs, oil and vanilla. Stir egg mixture into apple mixture, blending until thoroughly moistened. Stir in nuts. Pour into greased 9x13 pan. Bake 50 minutes or until cake springs back when lightly pressed
