2 4oz frozen salmon fillets
2/3 cup nonfat dry milk
1 3/4 cup water
1/2 bay leaf
minced garlic to taste
liberal sprinkling of seafood seasoning (I use Paul Prudhomme's Seafood Magic)
sprinkling of freeze-dried chives
dash of salt
2 tbps olive oil
1/2 cup sherry
dash of cayenne
1/2 can chili-ready diced tomatoes (or other seasoned tomatoes)
1/2 cup frozen diced seasonings (onions, peppers, celery)
1/2 cup frozen spinach
1/2 bag frozen cauliflower florets
milk (I use reduced-fat Lactaid)
1/2 cup grated Italian blend cheese
Combine all but last 3 ingredients in large microwave rice steamer.
Add equal parts V8 juice and milk until ingredients are covered then stir. Microwave on high for 15-20 minutes, then let sit for 5.
Stir in cheese.
