Bok Choy slaw

crunchy asian slaw

Serves: 4

Ingredients

Bok Choy chopped fine 2cups
1 Turnip grated
1 cucumber cut up in little pieces
3 T apple cider vinegar
1 T plus 1 tsp sugar
3 T sour cream
peanuts chopped up for garnish
sesame oil
salt and freshly ground black pepper to taste

Method

In a mixing bowl, combine the vinegar, sugar and sour cream and mix until smooth. Add the "cabbage" turnip and cucumber and toss to coat well. Season with salt and pepper. sprinkle with peanuts and sesame oil. Refrigerate for 1 hour to allow the flavors to blend before serving.
