Black Bean Burritos

This recipe is awesome when a quick dinner is in need. The black beans & bulgar add lots of substance & fibre, and you can add avocado or other favorite toppings for extra fullness and/or flavour. This recipe provides complete protein for vegetarians!

Ingredients

15oz. can of black beans, drained (but not rinsed!)
1/2 cup salsa
3 tbsp. uncooked bulgar wheat
Leaf lettuce, shredded
Tomato, diced
Cheddar cheese, shredded
Low fat sour cream (I use plain yogurt)
Whole grain flour tortillas

Method

1. In a saucepan, simmer the beans, salsa, and bulgar wheat for 5-7 minutes. Stir occasionally.

2. Remove from heat, cover, and let stand for 5 minutes.

3. Wrap the tortillas in aluminum foil and heat them in the oven.

4. Spoon the black bean mix onto centre of tortilla , garnish with tomato, lettuce, cheese, and sour cream/yogurt (avocado really adds to it too). Wrap and eat!
